First and foremost, the Whalesbone is Ottawa's Oyster House. Located at 430 Bank Street since June 9 2005, the crew has become renowned for quality oysters and an outstanding kitchen brigade. We are Ocean Wise certified, which means we only serve sustainable seafood choices that are caught, harvested or farmed in a way which ensures the long term health and stability of that species, as well as the greater marine ecosystem.
Twenty years after his fateful arrival in Ottawa, Radford is not only one of the hardest-working chefs in the city, but a busy merchant, leading the charge of the entire sustainable seafood fleet, and encouraging responsible consumption of marine life across the landlocked city. Through the intensity of it all, he manages to keep a smile on his face and shows no signs of slowing.
